Green Chili and Cheese Enchiladas

I have been wanting to use my green chilies from my bountiful basket for enchiladas.   So, tonight green chili enchiladas!!  I am making mine with chicken but I am adding variations for my vegetarian friends.  It was a little difficult to write down some of the exact measurements, because I just sometimes throw in this and that until it tastes right, but I tried!!!  I also have decided that I need to find an apron with full sleeves because taking things in and out of the oven is very dangerous for me...especially when I have put on "So You Think You Can Dance " and am watching Pasha dance over...and over...and over...I also may have almost burned the cream of chicken soup.  However, I didn't and the enchiladas are fabulous!  Happy eating!!
Green Chili and Cheese Enchiladas

2 dozen corn tortillas, flash fried
3-4 fresh green chilies roasted and chopped (I broil my until browned, peel off skin) or 1 small can of diced green chili
2 cups shredded cheese
2 pints sour cream
2 cups of homemade cream of chicken soup  or 2 cans of cream of chicken soup(I use mushroom for my vegetarian friends)
2 cups of chicken, cooked and cut up

Easy Homemade Cream of Chicken Soup
6 tbsp. butter
1 diced onion
1 cloves garlic, minced
1/3 c. flour
1/2 c. milk
1/2 c. light cream
3 c. chicken broth (to this I add caldo de pollo bouillon to mix…adds some nice kick)
1 c. finely chopped chicken
Melt butter in pan, sauté onion until translucent, add garlic.  Blend in the flour. Add milk, cream and broth. Cook and stir until it thickens and comes to a boil. Reduce heat. Stir in chicken and a dash of pepper.

Mix sour cream, soup,  green chili, 1 cup of cheese and chicken.  Spoon layer of sour cream mixture on bottom of casserole pan.  Dip corn tortillas in hot oil, and lay 1 layer on top of mixture on bottom of pan.  Repeat layer of sour cream mix and tortilla’s until sour cream mixture runs out and is the last layer.  Put in hot 350 degree oven for 20 minutes.  Half way through add rest of cheese.

Cherry Chocolate Ice Cream

My lovely friend Jen is coming into town, so I am making ice cream to bring some happiness to us all!  I actually haven't made ice cream very often this summer, which is extremely unusual for me.  Well, I looked to see what I had to make ice cream with, I almost always use the same sweet cream base and then add whatever I want, have or has been requested.  I had dove dark chocolates and cherries, so Voila!!!  Cherry chocolate ice cream!  Enjoy!


Cherry Chocolate Ice Cream


Ingredients

1/4 cup chopped chocolate (I love Dove Dark...pick your favorite!)
1/4 cup cherries, chopped
2 large eggs
1cup sugar
2 cups heavy whipping cream
1 cup milk (I use skim and it turns out just fine)


Directions

1.Chop chocolate and cherries.
2. Mix eggs with a whisk in a bowl until light and fluffy and no streaks. Whisk in the sugar until completely blended. Pour in the cream and milk and whisk until completely blended.
3. Put the mix into your ice cream maker and freeze following the manufacturer’s instructions.
4. After the ice cream starts to thicken  (about 5 minutes before it is done), add the chocolate and the cherries, then continue freezing until the ice cream is ready. Though when I am really lazy, I dump it all in at the same time and it turns out just fine.  :)

Sandia Agua Fresca

Well, dinner was leftover black beans and rice, tomatillo salsa and tortilla chips and it was fabulous.  So to accompany this fare I needed something refreshing, so having 1/2 a seedless watermelon in my fridge, I went with the sandia agua fresca....I don't measure, so I will give you my best guess and you can have the enjoyment of the refreshing drink.  The best things is, this is an extremely flexible recipe...adjust as needed. Go Team!



Sandia Agua Fresca 
2 servings


3 cups watermelon cut up
1 1/2 cups water
1 packet sugar, (I used sugar substitute)
1 cup ice


Blend together and enjoy this sweet, icy, fruity drink.





























Jalapeno Jelly

I am still working on ways to use all the bounty of my bountiful basket.  So today, I decided to make jelly.  Why not?  I have a half hour that I should be working on paperwork...might as well continue the productive procrastination that rules my life!  I enjoy eating this with wheat thins and cream cheese.  mmmm...I need to go pick up some wheat thins and cream cheese.  Later!
Homestead Jalapeno Jelly

Ingredients
1-1/2 cup red and green bell pepper, minced
1/2 cup hot Jalapeno peppers chopped fine
1-1/2 cup cider vinegar
6 cups sugar
1 package Pectin
2/3 cup water

Place peppers, vinegar, and sugar in large saucepan. Bring to a boil. Boil 10 minutes. While this mixture boils, mix the pectin and the 2/3 cup water in a saucepan and boil 1 minute. Set aside. Tomatillo Salsa

I can't really show you the steps to this recipe...but it is a truly incredible recipe.  This is the most addicting salsa I know...and boy I know addicting salsas!  Anyway...I recieved my bountiful baskets mexican food pack full of peppers and tomatillos and so I had to make this fabulous salsa...I double dare you to make it, and then, see if you can stop eating it.   
Sweet Tomatillo Salsa


10 tomatillos, husked
1 small onion, chopped
2 cloves garlic, chopped
1 green chili roasted (or small can of diced green chilies)
1 green bell pepper roasted
1/2 jalapeno roasted
1/4 - 1/2 cup cilantro
1 lime juiced
3-4 tblspns brown sugar
2 tsps white sugar
salt to taste



Place tomatillos in a saucepan with enough water to cover. Bring to boil. Simmer until tomatillos soften and begin to burst, about 10 minutes.

Drain tomatillos and place in a food processor or blender with roasted peppers. Add back to saucepan with remaining ingredients, except cilantro. Cook a short time, just until it boils. Remove from heat and stir in the cilantro.

The Price of a haircut....dinner

My lovely friend Anne is a fantastic haircutter....and my hair is getting out of control.  I have asked her to cut my hair, if I made her dinner.  She said yes, because she is awesome, and you get to see what I have created for her.  The menu...Spinach and Cheese stuffed Pasta shells with my marinara sauce, Garlic butter green beans will act as a side dish and the piece de resistance Pot de Crème au Chocolat...which sounds super fancy...but is super easy....so here we go!!!

Pasta Shells Stuffed with Spinach and Mozzarella with Sara’s special Marinara

Serves 4
Ingredients
• 20 jumbo pasta shells
• 1 cups fat free cottage cheese (but feel free to use ricotta or regular cottage cheese)
• 1 can spinach, drained and dried…I mean…squeeze that water out! (can use 1 pkg frozen & drained spinach or 1 bunch of fresh spinach trimmed)
• 1/2 cup grated mozzerella cheese
• 2 Tbsp grated parmesean cheese
• 1/8 cup fresh basil chopped
• 2-3 cloves garlic, minced
• Dash of oregano, thyme, any other spice that sounds entertaining
• salt and pepper to taste
• 2 cups marinara sauce (to follow)

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
3. Squeeze spinach dry. Combine spinach, cottage cheese, Parmesan cheese, spices, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.
4. Spread 1/2 cup marinara sauce evenly over the bottom of a 9x13 inch baking dish.
5. Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining marinara sauce over the shells. Sprinkle more mozzarella cheese on top of the shells.
6. Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30 minutes.

Sara’s Marinara Sauce
3 Tbsp olive oil
3 garlic cloves, minced
½ onion chopped
1 stalk celery, chopped
½ bell pepper chopped
1 (28-ounce) can crushed tomatoes
1 (14.5-ounce) can diced tomatoes
¼ minced fresh basil (but I often do more…depends on my mood)
½ tsp oregano and thyme
¼ tsp salt
¼ tsp sugar
Dash of chili peppers flakes

Cook the oil, onion, bell pepper and garlic in a medium saucepan over medium heat, stirring often, until fragrant but not browned, about 2 minutes. Puree tomatoes in a blender. I add the basil in and pulse them a few times in blender. Add tomatoes to saucepan with garlic. Bring to a simmer and cook until slightly thickened, 15-20 minutes.
Stir in the sugar and spices. Season with salt to taste.
***I often turn this into a vegetable pasta sauce by also sautéing, 1 chopped carrots, 1 chopped zucchini…anything else I can think of…

Garlic Butter Green Beans


1 pound of fresh green beans
2 Tbsp butter
3-4 cloves of garlic minced
salt

Trim the ends of green beans and steam. Drain.
In sauté pan melt butter and add minced garlic…cook until soft and aromatic.
Toss green bean with butter and garlic, salt to taste.
Green beans go cold fast, so serve quickly, and many will eat it as quickly as you serve it.

Pot de Crème au Chocolat 

Ingredients

4 oz. Dark chocolate ( I use about 18 Dove Dark…I add a few extra for grazing sake)
3/4 C. heavy cream
2 egg yolks, slightly beaten
2 Tbsp. granulated sugar
1/2 tsp. vanilla extract
dash of salt, nutmeg, cinnamon
pat of butter

Method
Heat chocolate in microwave in microwavable bowl with a half inch of water at the bottom, for about 45 seconds…take out of microwave and whisk until melted. Add to a saucepan, and turn to medium. Stir in sugar and heavy cream, whisking until smooth. Beat a small amount of chocolate mixture into bowl of beaten egg yolks. Gradually add the egg-chocolate mixture back into pan. (This step should keep egg yolks from curdling when mixed into the main chocolate mixture.)

Whisk and cook for several minutes over medium heat. Stir in vanilla and dash of salt, nutmeg and cinnamon and pat of butter (like ¼ tbsp).

Strain through small sieve to remove any possible cooked egg "lumps."(I am too lazy to do this, just make sure you whisk a lot. ) Pour into small ramekins. Chill until firm.

Presentation
Garnish with dollop of fresh whipped cream & grated chocolate.
Recipe should produce 4 servings. This dessert, if topped with plastic wrap (ungarnished) should last several days in the refrigerator.
I won't tell you how many I "tested"  What happens in my kitchen stays in my kitchen.
